Don't want too many carbs on your plate? I got you! If you haven't tried a lettuce wrap before, now is your time! This meal was so easy to prep and make, just how I like it.
Ingredients:
-1 c quinoa
-2 medium sized carrots
-lettuce
-1 can organic chickpeas
-1 cucumber
-1 tomato
Directions:
-saute chickpeas with 1 tsp of avocado oil, season with turmeric, cumin, sea salt, pepper, oregano
- cook quinoa (added sea salt)
-chop cucumber, chop tomato, peel & chop carrots
-wash lettuce & cut pieces to desired liking
- add sauteed chickpeas onto lettuce, top with chopped cucumber & tomato
-add the rest of the ingredients on the side of your container
Dressing:
-1-2 tbsp liquid amino
-2 tsp apple cider vinegar
-1 tsp minced ginger
-1 tbsp agave
-sesame seeds
* I made two meals with this recipe
* can add another can of chickpeas if desired
