Although it's not in an actual bowl, these ingredients remind me of when I make packed veggie bowls. This meal has 4 simple whole food ingredients with a tahini twist. I love simplicity!
Ingredients:
- 1 medium sweet potato
- Lettuce
- 1 can organic black beans
- 1 c brown rice
Directions:
1. wash & cut sweet potato into rounds then cut rounds in half, add avocado oil & salt (bake @ 375F for 30-40 min)
2. cook brown rice
3. warm up black beans ( added oregano, salt, & pepper)
4. wash & chop lettuce
5. Make bowl /container with finished ingredients & enjoy!
Tahini Dressing:
- 3 tbsp tahini
- 1 tsp coconut amino
- 1 tbsp filtered water
- 1 tbsp lemon juice
-1 tsp grated ginger
- salt & pepper
